Granny Tam's Pinapple Upside Down Cake

So since this is one of my fav's, and I have been getting some pretty yummy recipes from other blogger Mommy's I thought it's only fair..to share!

I have many fond memories of my Step Mother Tamara, she was and still is a big part of my life. Growing up she was always whipping up some delicious treat (always home made too). I may even try to follow in her foot steps and attempt her home made cinnamon roles on Christmas morning. So here it is, and it's really easy.

1 cube butter
1 cup of brown sugar
1 can crushed pineapple
You simmer these all together in a skillet

In Separate Bowl
1 can white sugar
1 cup flour
1 tsp baking powder

Add
3 beaten eggs
1 tsp vanilla
5 tbsp pineapple juice (taken from the can prior to mixing in with butter, brown sugar)

Pour batter over the simmering mixture (in a cake pan)
Bake at 350 for 30-45 minutes...

Mmmmmm..De-lish!!!
